My friend got a iPhone 8 Linked with itune then synced with an old copy which is form an old iPhone 5.
Everything is gone including over one thousand photos and contacts.
Is there any way to get data back?

All you can do is check the obvious.

1) Log in to the icloud and check what backups are available.
2) Check on every computer/laptop the phone has been connected to and see if there are any backups. The usual location would be: \Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\

Sometimes people forget they made a backup in the recent past.

How much data was there?
How much data restored/overwritten in GB?
