Computer 1 - Intel X25 Gen1 SSD that I am going to wipe to restore condition using HDDErase.
Computer 2 - Test system with Win7 and all my apps but on a 7200RPM disc.

I would like to convert the test system into my main system so do I just create an image of my Computer 2 drive and then write it to the Intel drive and then use the Intel drive as my boot drive for computer 2?

Are there performance issues with doing this? Any recommendations on the software I should use to create an image of Computer 2 that I will then write to the Intel drive? Is there a better way to do this?

Well you might have a few problems here.
Firstly i know some ssd's need to formatted and installed with the os to ensure proper alignment of the filesystem. This bug was fixed in windows vista formatter-and sp3 win xp.
Second- from my experience SSD's work best with fat32 (ntfs is ok but seems slower)

But sure you can just clone your test hdd to your ssd using ghost32 or any other 32bit based cloner. But is is not recommeneded.

From experience - i use my ssd as system drive with programs and games i use frequently for almost instant access. turn off page file or move it to a secondary hdd non ssd. keep other files document, photos, movies on there or nas drive.

I would recommend reinstalling everything on your ssd. but you will need to read intels forums on performance issues and what tweaks to implement for which os.

If using windows 7 there are some other steps to use your ssd- cant recommend any thing because windows 7 runs great on any hardware.
