The word "copy" is too generic to understand what you are trying to accomplish and thus providing advice.
What exactly are you trying to do?

You could copy the 1TB partition to the 2TB, make another partition with remaing space and have 2 drive letters for the drive
or yould just copy off the stuff from the 1 TB to the 2TB and use the remaining space but that seems so obvious I think it is not what you mean.
Do you mean "clone" or "restore the 1TB image to the 2TB drive" ?

If you are referring to coping a healthy drive to another it will work. My preference is to use software such as Paragon
http://www.paragon-software.com/products/home/ so I can expand or contract partitions to fit new drive as needed. Drives with problems are not addressed with this type of product.

Hello,
if you will copy, then you can use remaining space on your 2TB drive.
if you will image drive, there are more scenarios
- you can image to new drive 1TB to 1TB and on remaining space you create new partition, or use software to partitioning from 1TB to 2TB
- or image from 1TB directly to 2TB partition
