For a drive with a single double sided disk with 2 heads, if one head fails but drive will still initialise ok, does anyone know if theoretically you'd be able to image half the drive with the working head, then flip the disk over and image the other side with that working head?

If you think about it turning the disk over will make it spin backwards. Get a piece of card and mark an arrow on it pointing the same way on both sides. Then turn the card over and you will see it would spin backwards.

Well,
That Would Be a Nice Experiment ,But it should not work cos the servo info will not match the sector that its trying to fetch ,Generally when a head fails it should be properly inspected so that we come to know why it failed ,If its crashed on platter recovery would be very hard ,Which Drive is it BTW

The best way to get useful advice is to share the complete drive information, problem etc.
