You could face this problem anywhere, plumber, mechanic, electrician, house painter etc, etc, etc.
You do your due diligence and research the company first, just like everything else. Look for reviews or anything negative. Do not tarnish any company based on these thoughts for no reason.
This sort of behaviour gets found out and IMHO is not too common and probably not an issue if you research first.
You cant watch over their shoulder, so a certain amount of trust here is what it comes down to.
Edit - I forgot to say, some labs are pricey... you may thing a quote is too high or it may differ a lot to another company. They may be a great lab and that is the just what they charge. A cheap lab may be just a good, so you have to make these decisions. There are many reasons for price so you shouldn't be too negative about it.
