Possible to mount iphone as mass storage for data recovery?

With the hope of mounting an iPhone 8 as mass storage to run data recovery software on it, I bought iPhone Forensics by Jonathan Zdziarski, but when I got it, realized it was written in 2008.

2 questions:
Is any of this still relevant to modern iPhones running IOS 13?
Are there professionals out there successfully recovering data from restored iPhones? If yes, who?

- You cannot MOUNT iphone like external drive & scan for deleted info.
- When you RESTORE... whatever WAS there is GONE.
