Sorry guys, I haven't seen your replies before...
I think (at least I badly hope) I finally resolved the case with a different software that I found by chance thanks to Einstein; looking over google for a PST viewer. After a few tries, I found a free pst viewer from Systools (so totally different from you expected me to find I guess) but I gave a shot and... scanning result was definitely much better than with Stellar: much more folders and emails... So I decided to invest a few bucks in the Outlook recovery toolbox they have and at the moment saving process is on the road.... We'll see what happens ini a few hours.
Concerning Stellar, I must say that I'm very disappointed with their technical support... I've never seen something that bad ! But from old post I've read on the forum, I guess I don't teach you guys anything new about that !

I have found this good in the past
I tried Kernel Outlook PST Viewer (in my search for this PST viewer Einstein mentioned) but the file was considered severely damaged and the soft wouldn't go further on the recovery process.
I'll let you know how it finally went with Systool toolbox as soon as I got a result.
