Backing Up

Hi Guys,
Not sure if this should be here, or somewhere else in the forums, or even if its appropriate to what you guys do.
But, I had some issues with my HDD (see other post), and purchased a second 160GB Hard Drive to rape parts from.
However, since my old HDD is now fixed, I have an extra 160GB Hard Drive ready to be used, so I am going to put this in my server and use it to back up the main HDD just in case (again).
I do backup to USB, but only if/when I remember.
I am wondering if there is any good (preferably open source) software - or something in Windows XP itself that is good for effectively carbon-copying to the backup HDD.
Ideally, something that is immediate, rather than scheduled say every day. But, if not, something that could be scheduled at the end of every day etc.
Also, how would this deal with deleted files, in Recycle bin? Presumably it would delete those files too on the backup?
Can anyone offer any suggestions/advise on the software front?
