Newb needs advice

OK, I had a mirrored Windows Storage Space setup. Somehow blew up the partition/pool data. The data is still on the drive, but Windows (explorer and disk manager) can't see it. I called EaseUS to explain and ask which product would be most effective to purchase. A guy from their website kicked off a remote session and used WinHex to look at the drive and confirmed that the data is there, all intact and with the original file structure. He navigated around the folders, previewed pics, video files, Word docs, etc.
I don't mind learning. It's 7TB of data I'd like to recover. And the idea of paying someone $500-700 to do it seems crazy. Does anyone have any links to how-to guides or some crash course content to help me use WinHex or some other tool to access this data?
I plan just to copy the file structure intact to another clean drive.
Any tips? Suggestions?
