You have to know quite a bit about the RAID setup to have any chance. Factors like stripe size, RAID level, etc become key. X-Ways Forensics and EnCase will allow you to rebuild up to a certain number of drives into a RAID array. I have had some success and some failures. If the drives are in working order, you can always data-carve for files smaller then your stripe size
