I don't understand exactly what you want to do, but if you want to short the read channel, then look for two pairs of thin parallel traces running between the preamp and the MCU. One will be the read differential pair, the other the write pair.

In the photo, the two R/W pairs look like they may correspond to pins 3 & 4 and pins 7 & 8 from the left, on the top row of the preamp connector. I can't see any termination resistors, so I can't tell which is Read and which is Write.

If you wish to disable the EEPROM during power-up, then one way to do it would be to ground the Hold pin. Just make sure it isn't hardwired to the supply. Usually there will be a pullup resistor. Alternatively you could try grounding the Clock or Data pins. You can release the shorted pin after the board has powered up.
